The HI96813 Brix and Latent Alcohol Refractive Index converts the Refractive index to the Sucrose concentration in percent by weight,% Brix (also known as ° Brix). The theoretical basis for this conversion is the saccharide analysis method provided in the book of the International Committee on Uniform Analytical Methods for Sugar. Since the saccharide in grape juice is mostly fructose and glucose does not have Sucrose, the refractometer's glucose reading in the measurement of wine is often referred to as "Apparent Brix".

Principle

Steps
