Animal fat and oil-determination of melting point

This standard specifies the method for determining the melting point of animal fats that solidify at room temperature. The principle of the determination involves immersing a capillary glass tube containing a solidified fat column into water at a specified depth, heating it at a prescribed rate, and observing the temperature at which the fat column begins to rise, which is recorded as the melting point. The core instruments used in the determination include capillary glass tubes, precision thermometers with auxiliary thermometers, cooling devices for sample pretreatment (such as constant-temperature cold water baths, refrigerators, or specific low-temperature brine baths), and adjustable electric heat sources. Currently, fully automatic melting point instruments designed based on the principles of this standard are also widely used, as they can automatically perform heating, monitoring, and recording, thereby improving the efficiency and objectivity of the determination.
